Choosing a grinder: VS3, VS4 or VS6?
All three Varia grinders are single-dose grinders: you weigh the beans for one brew, grind them, and almost nothing stays behind. They all grind for espresso and for filter. The differences are in the burrs, the motor speed, the size, and how much you want to tinker.
The short answer
- Varia VS3 Gen 2: pick it if you want a compact, simple grinder at the lowest price.
- Varia VS4: pick it if you want to change the grinding speed and have bigger conical burrs, without a big machine on your counter.
- Varia VS6: pick it if you want flat burrs, the option to swap burr sets, and the widest speed range.
Burrs: conical or flat
The VS3 Gen 2 uses 48 mm conical burrs and the VS4 53 mm conical burrs. The VS6 ships with 58 mm flat burrs and also takes an optional 63 mm conical set.
Neither burr type is better; they taste different. Conical burrs are often described as giving more body, flat burrs more clarity. If you want to try both, the VS6 is the only one of the three that lets you.
Speed: fixed or variable
The VS3 runs at a fixed 170 RPM. The VS4 lets you set the speed between 150 and 300 RPM, and the VS6 between 500 and 1600 RPM. Speed changes the cup: in our own VS6 tests, slower speeds gave a rounder, heavier body and faster speeds more brightness. If you like to experiment with that, choose the VS4 or VS6.
Adjustment
All three are stepless. The VS3 and VS4 move in 10-micron steps; the VS6 in 5-micron steps, which makes very fine espresso adjustments easier.
Size and workflow
- VS3 Gen 2: 147 × 90 × 310 mm, 3.2 kg, 30 g hopper. You adjust by turning the hopper.
- VS4: 161.4 × 97.7 × 337 mm, about 5.27 kg, 30–40 g hopper, active ionisation against static and a tool-free chamber for cleaning.
- VS6: 191.6 × 130 × 403.7 mm, 10.7 kg, 80 g hopper, all metal, active ionisation, and a hard case in the box.
Our advice
Most people who mainly drink espresso or a daily pour-over and want an easy start are happy with the VS3. If you are curious about how speed changes taste, the VS4 is the sweet spot. If you want to go deep, swap burrs and fine-tune in 5-micron steps, go for the VS6.
All three come with a 2-year warranty, serviced by us in Europe, and we keep burrs and spare parts in stock.
